 Meet Lucy Mathieson...

She's the founder of Bake Play Smile, aka "the foodie's paradise", featuring delectable sweet treats galore.

She's also mama to cheeky little adventurous Will.

Tell us about the beginnings of Bake Play Smile?

I’d been a primary school teacher for a couple of years and while I absolutely loved my job, I felt like I needed a new challenge that was totally different from work. I started Bake Play Smile as a way to share my favourite recipes with friends, and within a couple of years it had grown from a little hobby to my full-time job. I’m incredibly grateful that I can work at home… with a seriously adventurous toddler in tow!!


Describe your day on a plate.

I have a coffee when I wake up and start work (about 4.30am… eeek!). My son, Will, usually gets up around 7am and we’ll have breakfast together. We’ll have muesli and fruit, porridge, poached eggs, or avocado on toast. Green smoothies are a favourite in our house too. Lunch is usually a salad or a sandwich… just something quick and easy! I’m not a massive fan of cooking dinner, so that’s usually my hubby’s job. I try and make up for it with a dessert now and then though!

Sweet or Savoury?

I’d have to say sweet… but I think I’m becoming more and more savoury. To be honest, as long as it’s delicious, I don’t mind!!


When it comes to baking your delicious goods there is certainly sugar involved! Yum! What is your stance on sugar and kids?

I think everything in moderation is fine! I grew up baking with my Mum and I certainly do the same with my son. I think it’s ok to have a slice of cake or a yummy biscuit every now and then. As long as the majority of what we’re eating is healthy and we’re getting out and about being active each day, I don’t see an issue.

I’d hate to be picky… either is fine!

If you could invite any 3 people to a dinner party, who would you invite and why?

I’m a simple girl... my husband, my son and my Mum would be pretty perfect! Or a couple of my close girlfriends! I’m lucky to have really kick-ass family and friends!


What is your favourite way to switch off?

To be honest, I’m really bad at this and find it so hard to do. I love having a bath and reading a trashy magazine (although I’m usually still checking emails at the same time). Relaxing is definitely something I need to work on.

Champagne for sure!

Cheesy Mashed Potato Cakes

2 cups cold leftover mashed potato
60 g (1/2 cup) plain flour
125g (1 cup) grated cheese
2 eggs, whisked
3/4 cup frozen peas
salt and pepper, to taste
1 cup panko crumbs, to coat


Preheat oven to 200 degrees celsius (fan-forced).
Line two baking trays with baking paper.
Place the mashed potato, plain flour, grated cheese and eggs into a bowl and mix until well combined.
Add the frozen peas, salt and pepper and mix through.
Dust your hands with flour and roll the mixture into 1/4 cup sized balls.
Place the balls into the panko crumbs and press down to flatten slightly.
Coat both sides and place onto the prepared baking trays.
Spray with cooking oil and place into the oven for 30-40 minutes or until golden and crispy on the outside (they'll still be deliciously soft on the inside). Turn over partway through cooking.
Serve warm or cold.


Note: The mixture should be sticky (but able to be formed into a ball with lightly flour-dusted hands). If you're mixture is too runny, add a bit of extra flour to the mixture.
