Easy meals for parents

Fran the Nanny and I have more in common than I would like to admit.

Mad hair? Check.

Mismatched outfits? Check.

A frequent inability to get dinner on the table? Check.


Let’s be frank. Cooking dinner as a parent, every friggin’ night, is, more often than not, not the most enjoyable part of parenting. Excluding nappy changes. 💩

Gone are the days where cooking meant cooking for yourself, or perhaps a grateful friend or partner.

In its place, are shrieks of disgust and flying peas.

Oh, the joy of parenthood.


Although takeaway is an easy phone call away (and UberEats and the like aren't making it any less of an appealing option), save money, and time, by channelling your inner Donna Hay with these easy meals that can be whipped up in a flash, and require little to no skill in the kitchen.


Fruity Chicken

Easy meals for parents


1 cup cooked white rice
1/4 cup cooked chicken breast, finely diced
400g tin apricots in fruit juice


Combine, and serve. Foolproof.

 Even better if you have leftover rice, or if you're really feeling like Fran, buy the instant version; absolute life-saver.


Ham and Pineapple Pizza Muffins 

Easy meals for parents


3 English muffins, split
6 tbsp pizza sauce
4 slices ham, diced
1 tin (440g) crushed pineapple, drained well
3 cup pizza cheese


Toast the muffins in the toaster and spread 1 tablespoon of pizza sauce on each.
Scatter ham and pineapple on the pizza sauce.
Top with pizza cheese.
Place under the grill until the cheese is melted and serve.


Fiesta Spaghetti

Easy meals for parents


140g uncooked spaghetti, broken in half
500g lean (at least 80%) ground beef
1 package (30gm) taco seasoning mix
1/2 cup water
1 1/4 cups tomato pasta sauce
1 box taco shells (10 shells)
1 medium tomato, chopped (3/4 cup), if desired
2 tablespoons shredded Parmesan cheese


Cook spaghetti as directed on package; drain.
Meanwhile, in a medium sized pan, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in taco seasoning mix and water. Heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes or until thickened. Stir in pasta sauce; cook over medium heat until hot. Stir in cooked spaghetti.
Meanwhile, heat taco shells as directed on box. Spoon about 1/2 cup spaghetti mixture into each taco shell; top with tomato and Parmesan cheese.


As someone who has as much skill in the kitchen as a gorilla, I can attest that these meals are idiot-proof.
