Meet the lovely Laura Francesca.. She's the baker behind Bella Cucina, and has a true knack for creating cakes that are seriously impressive. Believe it or not, she has no formal qualifications, and despite this, she could definitely give graduates of Le Cordon Bleu a run for their money.
She's a fan of red wine accompanied with cheese (😍) and is a sucker for Bradley Cooper's smile...who isn't?

Your cakes are out of this world! How did you get into baking such beautiful creations?
Growing up in an Italian family, I have always been surrounded by food and lots of it! My mum is ALWAYS in the kitchen as was my grandmother so I suppose I have drawn my passion from them. Baking is like my therapy. I have no formal qualifications, I just thoroughly enjoy being creative and making beautiful and delicious treats for my family and friends to enjoy .
Where can you get the best coffee in Melbourne?
GOOD question. Melbourne is a coffee mecca. It is hard to choose one place! But if I am honest I LOVE Brunetti’s in Carlton, Not only for their amazing coffee but their incredible ambience, it is like a slice of Italy right on our front doorstep.
What has being a mother taught you about yourself?
Being a first time mum, I have been overcome with an array of emotions. It has taught me to love, cherish and be patient with every aspect in life. It is such a blessing to have a child and to watch them grow right in front of your eyes. For me there is no greater accomplishment.
Red, white or rosé?
RED. To be enjoyed with an array of cheese and antipasto.
If you could teleport anywhere in the world right now, where would you go?
I have travelled a fair bit in my time however one place in particular has my heart; and that is Bellagio on Lake Como, ITALY. Every time I have visited there it has taken my breath away. It’s a picturesque landscape, straight out of a fairytale, and has to be seen to be believed.
What is your most treasured possession?
I don’t think I have one specific material possession that I treasure. If I am perfectly honest even though it is not a possession as such it is my Family. I honestly would not know what to do without them.
What does your perfect day look like?
Sleep in (as I don’t know what that is these days) hehe. Followed by a coffee of course. Then a delicious brunch, massage and pedi! BLISS!

Bradley Cooper…. That smile gets me EVERY time *Sigh*
If you could have lunch with anyone, living or dead, who would it be?
Living would have to be my ultimate latino crush Ricky Martin, for some lunch and salsa lessons and passed on would be my grandmother…. I lost her at such a young age I didn’t have the opportunity to voice exactly what she meant to me. I also wish I could get her ricotta strudel recipe off her; I have tried to replicate it many times but it is just not the same.
Funfetti Birthday Cake
250g Unsalted Butter (Softened)
1 cup Caster Sugar
1 Tsp Vailla Extract
2 Cups Self Raising Flour (Sifted)
1/2 Cup Full Cream Milk
4 Tbls Funfetti Sprinkles
Cream Cheese Frosting Ingredients
250g Cream Cheese (Softened)
100g Unsalted Butter
3-4 cups Icing Sugar (Sifted)
1 Tbls Vanilla Extract
1 Tbls Lemon Juice
Preheat oven to 180C.
Grease and line 2 8 inch cake tins (set aside).
Using an electric stand or hand held mixer beat the butter, sugar & vanilla in a large bowl until pale and creamy.
Add eggs one at a time beating on medium speed after each addition.
Add the flour & the milk alternating in batches until just combined (Do not over mix).
Remove from mixer and gently fold through funfetti sprinkles using a spatula.
Divide mixture between tins, tap each tin on a flat surface to even out the batter and erase any air bubbles.
Bake for 20-25 mins or until a skewer is inserted & comes out clean.
Using an electric stand with a paddle attachment or a hand held mixer beat together cream cheese & butter until super smooth.
Add sifted icing sugar 1 cup at a time to achieve your desired taste & consistency. *Tip: Make sure your mixer is on low when adding icing sugar to avoid making a giant mess!
Lastly add vanilla and lemon juice and mix until combined.
Once cakes have cooled completely it is time to frost and decorate! This is a great job for the little ones to help out with :)
